1.目的及意义

Research purpose:

As Chinese people more and more likely to go abroad, Chinese cuisine has gained a place all over the world. However, there’s still no official standard for the English translation of Chinese dishes though English is the most widely used official language in the world. Under the guidance of four, this research does several translation practice of the dishes from A Bite of China Ⅱ and establishes a corpus, aiming at obtaining the translation strategies and methods of English translation of Chinese dishes based on these four translation theories. And bringing out the linear relationship among translation theories, translation strategies and translation methods.

Research significance:

As a treasure of Chinese traditional culture, Chinese cuisine is extensive, profound and diversified, which is one of the important means to promote Chinese culture. Only by translating the dishes into English accurately, can we help foreigners understand the unique connotation of each Chinese dish better and thus promote the cross-cultural communication between China and the world. In addition, the standard English translation of Chinese dishes can spread Chinese culture better and promote the development of China on the international stage.

Existing researches analysis:

Many domestic scholars have studied the English translation of dish names from the perspectives of translation methods, translation principles, translation theories and translation strategies. Common translation theories include German Functionalist Approaches, Skopos Theory, Communicative Translation Theory, Interpretive Theory, Functional Equivalence Theory, Cross-Cultural Communication Theory, etc.Translation methods include literal translation, transliteration, transliteration plus annotation, and free translation. Translation principles include avoiding cultural conflicts and conducive to cultural exchanges. Translation strategies include alienation and naturalization. Based on the studies of domestic scholars, it can be seen that most scholars’ studies based on the guidance of one certain theory. However, the English translation of Chinese dishes are complex and diverse, so different types of dishes need different theories to guide in order to convey the connotation best.
