食用植物油与餐饮废弃油脂的气质联用鉴别方法研究任务书

植物油是从植物种子、果肉及其它部分提取所得的脂肪脂,是由脂肪酸和甘油化合而成的天然高分子化合物,广泛分布于自然界中。
废弃食用油脂是指人们食用天然植物油和动物脂肪后,或油脂加深加工过程中产生的一系列失去食用价值的油脂废弃物,餐饮废弃油脂是指在餐饮加工过程中,残留、遗弃的废弃油脂。
餐饮废弃油脂在精炼过程中经长时间反复多次高温加热,不饱和脂肪酸遭到分解,其营养价值显著降低,同时,由于其是废弃物,接触的环境条件复杂,还会带入各种有毒有害物质,因此食用餐饮废弃油脂加工后的油脂,可能引发各种卫生安全问题。
