淀粉是自然界广泛存在的一种天然多糖,存在于高等植物的根、块茎、籽粒、果实、叶子等,在食品、造纸、化工及制药等行业都有广泛的应用。

淀粉颗粒主要由直链淀粉和高度支化的支链淀粉所组成。

通常,淀粉颗粒中含有10%~30% 的直链淀粉和70%~90%的支链淀粉。
