摘 要

在当今经济全球化进程中，只有不断地提升企业经营效率，推动企业持续保持竞争优势，才能使企业立于不败之地。另一方面，乳制品与人们的生活息息相关，虽然对乳制品产业的研究众多，但是对乳制品行业企业经营效率进行评价的研究并不多见。科学的乳制品行业企业经营效率评价，有助于乳制品企业对目前阶段经营管理中的问题进行分析与总结，提高乳制品企业经营效率。

本文首先在阅读大量国内外相关文献的基础上，对国内外研究现状进行梳理，同时明确相关概念的界定。之后对几种常见的经营效率评价方法进行对比分析，在参考乳制品企业发展现状及特点的基础上，选取数据包络分析（DEA）法进行企业经营效率评价。而后根据经营效率评价指标的选取原则确定本次研究投入与产出的决策指标。最后将收集的数据输入DEA模型进行运算，得出DEA各效率结果。

研究结果表明，大部分企业呈现规模报酬递增，说明乳制品行业还有很大的发展空间。同时，研究结果显示部分企业投入冗余问题较为严重，本文也据此提出了提高乳制品企业经营效率的对策，并对本次研究进行总结和展望。

Abstract

With the development of economic globalization, enterprises can establish an invulnerable position only by constantly improving operation efficiency and promoting competitive advantages of enterprises. Dairy products, on the other hand, are closely related to people's life, although the study of the dairy industry is numerous, but the research on the evaluation of dairy enterprise operation efficiency is rare. Scientific evaluation of the efficiency of dairy enterprises can help the dairy companies to analyze and summarize the problems in the current stage management, and improve the operation efficiency of the dairy enterprises.

Firstly, on the basis of reading a large number of domestic and foreign literature, the author has combed the research situation at home and abroad, and clearly defined the relevant concepts. Secondly, several common methods of evaluation of operational efficiency were analyzed. On the basis of referring to present situation and characteristics of dairy enterprises, I decided to select the data envelopment analysis (DEA) method to evaluate the efficiency of enterprise operation. In addition, based on the selection principle of the evaluation index, the index of input and output of this research is determined. Finally, the DEA model is carried out and the results of the DEA are obtained.

The research results show that most companies are in the increasing stage of scale returns, which indicates that there is still a lot of room for development in the dairy industry. Meanwhile, it shows that some companies have a serious problem with overinvestment, and this paper also puts forward some countermeasures to improve the operation efficiency of dairy enterprises. Moreover, it makes a plan for the future research at the end of this thesis.

1.1 研究目的及意义

对企业经营效率的评价不仅仅是专家、学者的关注点，也是企业管理者的关注点，它既财务管理领域的前沿问题，更是一个极富有现实意义旳应用问题。对乳制品产业的研究是近年的研究热点之一，相关研究成果众多，但是这些研究大多数集中于从宏观层面上分析乳制品产业的竞争态势，或国外乳品定价对我国乳品行业的影响等方面，对乳制品行业企业经营效率评价问题的研究则不多见。鉴于此，本文拟选取乳制品企业经营效率的投入、产出诸指标，引入DEA模型的分析方法，对乳制品企业经营效率进行评价，发现其在经营效率的投入与产出各方面存在的问题，据此，提出提高乳制品企业经营效率的对策。

1.1.2研究意义

通过对乳制品行业企业经营效率的合理评价，可以使管理者了解企业在激烈的市场竞争中的地位，根据评价结果寻求最佳的生产要素组合，提升企业竞争力。其次，虽然行业之间会有一定的差异性，但是对本次研究的过程以及结论分析，可以为其他行业经营效率研究提供模型构建、指标选择以及对策分析等方面的指引。

（1）以DEA有效的企业为参考对象，对乳制品行业非DEA有效企业进行投影分析，对其投入的员工数量、固定资产、技术水平等决策指标进行调整，通过提高技术效率和规模效率来提高乳制品企业经营效率。
